About our range of Wines

Rising Star has 10 acres ‘under-vine’ making it a boutique size vineyard. The vines are divided between two sections. A small block of “House Cabernet” planted behind the cottage on Redman Road, and the remaining varietals in an elevated position up the hill. All vines are supported by VSP (Vertical Shoot Positioning) trellising, facing a northerly aspect – ideal for grape growing.

Being part of the Great Southern Wine Region, the vineyard is made up of the following cool climate grape varieties:

Riesling

Chardonnay

Pinot Noir

Pinot Meunièr

Merlot

Cabernet Sauvignon

The Chardonnay, Pinot Noir, and Pinot Meunièr are clones were specifically planted for our sparkling wine range, a specialty of Rising Star. All sparkling wines are hand picked and whole bunch pressed in the winery. They are then bottle-fermented and remain on yeast lees for a minimum of 4 years before disgorging. This provides for elegant and sophisticated sparkling wines in line with the “Methode Traditionelle” approach of the infamous Champagne region of France.

Our wines are only estate grown, meaning “if we don’t grow it, we don’t put it in our bottles!” This range currently includes:

Sparkling Chardonnay “Blanc de Blanc” produced in the ‘Methode Traditionelle style, Boytritis Riesling (a rare gem!),  Chardonnay, Cabernet/Merlot,  Riesling, Rose’.
